Holland America Line starts rolling out a refreshed Morimoto by Sea menu this month, beginning with Nieuw Amsterdam and reaching the rest of the fleet by mid-November 2026. Chef Masaharu Morimoto will also sail with guests on an eight-day Alaska cruise roundtrip from Vancouver on May 8, 2027. How much of that new menu you can order depends on which ship you are booked on, because Morimoto by Sea works differently on all 11 of them. If you have a Baja or Pacific Coastal sailing out of San Diego this fall, the pop-up version reaches your ship too.

My own reference point for Morimoto is Nobu, one of my favorite upscale sushi restaurants anywhere. Morimoto ran that kitchen in New York starting in 1994, and he was still Nobu's executive chef when Iron Chef turned him into a household name; he did not leave to open his own restaurants until 1999. I have a hard time believing anyone who calls themselves a foodie has never watched him cook on that show.

His influence on a ship built around fresh fish, on an Alaska itinerary, is a different proposition than bolting on another steakhouse. It also lands while Holland America Line is gearing up for a $500 million fleet renovation, so the dining news is one piece of a much larger push.

What Morimoto by Sea Is, and Which Version Your Ship Has

Holland America Line runs Morimoto by Sea in three formats, and the press announcement collapses that into two. The distinction decides how much of this menu you can order on your sailing.

A full standalone restaurant operates on Nieuw Amsterdam, where it opened in December 2023 as Chef Morimoto's first restaurant at sea. It serves dinner only and runs about $55 per person, subject to change, with Have It All specialty dining credits applying. Reservations are strongly recommended, though not required. A Morimoto Sushi Bar operates on Koningsdam, Nieuw Statendam and Rotterdam. Every ship except Nieuw Amsterdam also gets the pop-up, which takes over Tamarind or Pinnacle Grill at least once per cruise.

So the formats stack. Outside Nieuw Amsterdam every sailing gets at least one pop-up night, and those three ships add a Sushi Bar on top of it. For West Coast cruisers the useful case is Koningsdam, running Baja itineraries out of San Diego this season and therefore carrying both. Seattle is Holland America Line's other Alaska homeport, and any ship sailing from there gets the pop-up at minimum.

The Menu Opens With Shokupan Bread and a Reworked Sushi Mori

The first thing to reach the table on the new menu is Chef Morimoto's Shokupan Bread Service, his own take on Japanese milk bread. Shokupan is the pillowy, faintly sweet loaf that shows up in Japanese bakeries and convenience stores, and leading with bread at a restaurant whose reputation rests on raw fish takes some nerve.

The updated Morimoto Sushi Mori comes out of the same rewrite. It is a chef-selected assortment, not a fixed list, and Holland America Line says it draws directly on the pop-up experience that has been running fleetwide. If you have eaten the pop-up on a Baja week and liked it, this is the version of that plate the restaurant is building on.

The New Appetizers and the Three That Stayed

Three new starters join the menu. Popcorn Shrimp comes with a Morimoto-style gochujang, the Vegetable Wonton is sauced with Asian sesame garlic chili, and the Lobster Miso Soup is built on a white miso broth, the milder and sweeter of the two standard misos.

Three holdovers survived the rewrite: Pork Gyoza, Taco Two Ways and Sticky Ribs. Holland America Line does not explain what got cut or why.

The three new main dishes are where the rewrite spends its ambition. Tan Tan Noodles arrive in a red curry broth with miso-infused ground chicken, a departure from the standard sesame-and-chili base. The Miso Lamb Chop comes with kombu-braised daikon and a gochujang-infused lamb jus, Korean heat on a plate that more often gets a French finish.

The Butter Poached Lobster Tail is the most restrained of the three, warm yuzu butter being a lighter finish than poached lobster usually gets. Holland America Line's own photography plates it alongside furikake fries, the kind of high-low pairing Morimoto has been doing on land for two decades.

Morimoto Buri-Bop Returns as the Menu's Signature Plate

Japanese Curry is back on the menu, and so is the Morimoto Buri-Bop, the dish the line calls his signature from his Iron Chef days. If you have not had it, buri is yellowtail, and the dish is a bibimbap built on it: rice and fish in a cast-iron or stone bowl heated until the rice crisps against the sides, seared and mixed at the table in front of you.

It is the most theatrical thing on the menu, with a server searing the fish and mixing the bowl at your table.

The Ribeye and the Miso Lamb Chop Are Not an Afterthought

The Global Fresh Fish Ambassador title and a sushi-led menu make Morimoto by Sea sound like a room to skip if the person you are traveling with does not eat seafood. Holland America Line's images for the new menu include a glazed ribeye on a cast-iron sizzle plate with charred corn and a side skillet of brussels sprouts, and the Miso Lamb Chop is a headline main.

That matters more on a ship than it does on land. You are choosing one specialty restaurant for the two or three nights you are willing to pay a cover, and a room that only works for half your table loses to Pinnacle Grill every time.

Fresh Fish From 60 Ports Reaches the Ship Within 48 Hours

Holland America Line sources fresh fish at more than 60 ports worldwide, carries north of 80 varieties, and says it gets the catch aboard within 48 hours. Alaska is one of the program's named sourcing regions, along with Mexico, Hawaii and Canada, and Holland America Line describes the program as particularly robust there. A West Coast itinerary sails through those sourcing waters. The Marine Stewardship Council and Aquaculture Stewardship Council certified the program in 2024.

Chef Morimoto's role extends past the specialty restaurant. Three of his dishes, Fresh Grouper XO, Red Miso Snapper and Lobster 2 Way, are on the main dining room menu fleetwide, included in your fare. Most celebrity chef partnerships at sea stop at the door of the room with the cover charge. Chef Morimoto Sails Alaska Roundtrip From Vancouver on May 8, 2027

The Culinary Ambassador sailing is an eight-day Alaska cruise roundtrip from Vancouver aboard Nieuw Amsterdam. Holland America Line has not published the event lineup yet, pointing instead to the 2026 Grand World Voyage, where Chef Morimoto hosted intimate dinners, a cooking demonstration and Japanese cuisine-themed trivia.

Put that date against the format list above and the sailing gets more interesting than the announcement makes it sound. Nieuw Amsterdam is the one ship carrying the full standalone restaurant, so the week the chef is aboard is also the only week you can eat the complete menu instead of a pop-up night or a sushi bar. Pair it with an Alaska itinerary and a fish program that sources in Alaska directly, and the pieces line up in a way a Caribbean week would not.

The fleetwide rollout also finishes in mid-November 2026, after the Alaska season has closed. Baja cruisers get the new menu this fall; if your Alaska week runs the Inside Passage to Juneau, this is a 2027 story.

Holland America Is Upgrading Dining Now and Ships From 2027

The menu is the near-term half of a much larger investment. Holland America Line's $500 million Evolution program rebuilds six ships, starting with Oosterdam in fall 2027 and covering Nieuw Amsterdam and Eurodam as the two Signature Class ships on the list. Oosterdam alone gains 76 staterooms, thirty purpose-built Solo Verandahs with a private balcony and a dedicated workspace, and the Grand Dutch Café that until now only Pinnacle Class guests could walk into. Schedules for the remaining five have not been published.

A cruise line rewriting its specialty menus in the same stretch it commits $500 million to its ships is improving on a schedule, and Alaska is where we see it first. Holland America Line is already our first recommendation for the Inside Passage, and each of these upgrades makes it an easier one to give.
